Biota Dining began life as a country motel, and after a signifiant refurbishment it is now home to a huge restaurant, bar area, courtyard, lush green space and 12 rooms to stay. 18 Kangaloon Road I couldn’t finish it, it was waaaaaaaaaaaaaaay to sweet and it was also a little lumpy. It made me giggle because I’ve never seen that before in a restaurant. I love how Biota lets the produce speak for itself by using simple, seasonal ingredients prepared with minimum fuss. The creamy ice-cream was a refreshing contrast to the sweet caramalised pear. Dessert time! The potatoes were impossibly smooth and creamy thanks to the generous amount of butter, and the hazelnuts and sauce provided a lovely nutty flavour. I’ve been know to love potatoes a little too much, and I may have demolished more than my fair share of this amazing side dish – Creamed Potatoes with Burnt Butter and Hazelnuts. Before I had even started looking at the menu (I was too busy taking photos and taking in the lovely setting) we were served with fresh warm bread. We were warmly greeted and seated near the kitchen area where we had prime seats to see the chefs preparing our dishes. That looks like an impressive meal! It was inspiring to see so much care was taken on presentation. They have a private dining room at the other side of the restaurant where they have TVs set up so you can watch the kitchen preparing the plates and not miss out on the action.

I would love to come back and try the 'biota-lounge’ menu, the croquettes and mini wagyu burgers sounds delicious! Since we were in the Southern Highlands, we of course had to order a local wine. We also got some Malted Rye Bread (served in a gorgeous furry pouch) and the most divine homemade smoked butter. The wafer log was unbelievably light and delicate.

The interiors of the restaurant section of Biota are impressively designed, with a Nordic/rustic feel. There’s lots of timber and a muted colour palette used through the dining room, and a more relaxed version found in the bar area (complete with comfy couches and a great fire).
